Because most non-alc wine-makers choose to use "vacuum distillation" to remove the alcohol—a cheap & fast process that cooks your wine to quickly evaporate the alcohol in a couple of hours. This "cooking" alters the composition of your wine, causing a loss of flavor, aroma & complexity along the way. 

ONES uses reverse osmosis—a gentle process that can take days, but doesn't change the composition of the wine like cooking it does, allowing it to retain the authentic flavours & complexities of wine.

ONES wines take 3X longer to make than most other non-alc wines.

Made With Grapes Grown Specifically at Latitude 46°N 

These unique grapes are grown at a similar latitude (46°N) to the European wine regions of Bordeaux & Burgundy. Like these European regions, the U.S. experiences the same extended daylight hours at this latitude that contribute to even ripening & deep flavor development.

Made With Real, Fermented Grapes—Not Vinegar

Unlike some non-alcoholic wines that use vinegar as a base—ONES uses only grapes & puts them through the fermentation process. Fermentation is the only way to unlock many of the classic flavors of wine.

Non-Alc Wine With More Character Than Your Favourite Novel

To avoid losing character like zero-alcohol wines, ONES wines keep a small amount of the alcohol content. 

Why? 

Because stripping wines of 100% of their alcohol content also strips 100% of their wine-like character. 

Through extensive experimentation with the alcohol-removal process, ONES discovered the perfect balance between alcohol levels & flavour. This trace amount of alcohol is what gives the wine its pleasant aromas, a noticeable mouth presence, and a lingering & balanced finish.

So, is it just grape juice? 

Definitely not. Grape juice doesn’t go through a fermentation process. ONES wines are fully fermented which is what gives wine its textures, flavours, aromas and mouth-feel. Only then do we remove the alcohol from the finished wine.

Why do you keep some of the alcohol?

Removing 100% of the alcohol noticeably affects the mouth-feel & texture. With trace amounts of alcohol (0.5%) we’re able to bring you much more flavour, character & mouth-presence than other non-alcoholic wines.

Are these as heavy as regular wine?

These are lighter, non-alcoholic wines. Because ONES doesn't add sugar to create heaviness, these wines are lighter, but have a noticeable mouthfeel that leads to a much more authentic wine flavour than other non-alcs.

The unique climate of the Columbia Valley at parallel 46 is the secret ingredient required for creating unique, flavorful wines.  Hot summer days provide plenty of sunshine which allows the grapes to develop rich, ripe fruit flavors.
